Spinach and Mushroom Pizza
There are times when all I want is PIZZA!! The chewy crust, the melted cheese, the tomato sauce! But then there are times I know I should eat slightly healthier…so I created this dish. It’s “semi-homemade” so it’s really easy to put together. I buy the crust from the supermarket, but you can also buy fresh from a bakery or get crazy and make your own crust.
I pre-cook the crust if needed or I just assemble the toppings onto the raw dough to be baked. For this particular pizza there were a few steps.
Ingredients
one pizza crust, store-bought, homemade, half and half, the choice is yours
4 cups fresh spinach
4-5 baby Portobello mushrooms
3 garlic cloves, minced
1 Tbsp olive oil
2 Tbsp, or more, crumbled Feta cheese
Directions
Preheat the oven according to crust package instructions, or preheat to 400 degrees.
Lay out crust onto a baking sheet lined with parchment paper.
Heat a large skillet over medium heat with olive oil.
Mince garlic and slice mushrooms.
Place garlic in skillet, allow to cook until fragrant before adding in mushrooms. Let mushrooms cook for about 3-4 minutes, they should be tender, before adding in the spinach.
Let the spinach wilt, add more spinach as needed.
Sprinkle a little bit of olive oil onto the pizza crust before adding on toppings. Spread out the cooked spinach and mushroom over the crust before topping off with feta cheese.
Cook in oven for about 15 minutes or until the crust has cooked through, follow package directions for timing.
Remove from oven and add more feta cheese, if you would like, let sit for a few minutes before cutting in!
