Lazy Woman's Apple Pie
I called this Lazy Woman’s Apple Pie because it had no crust, not even a store-bought crust! But, hey, some people don’t like, are allergic to, or don’t want to make/buy the crust. These are also small portioned, because sometimes I just want the hint of an apple pie without feeling guilty about eating the entire full pie!
I got the rose design idea from a larger, full size pie I had made only a few weeks earlier. One with a crust and in a fancy pie dish from Crate and Barrel.
Ingredients for Two 4 oz. Ramekin Apple Pies
3 large Envy apples (gala apples also work, look for ones with red skins if you want the aesthetics)
Half a lemon, squeezed
1 Tbsp apple pie spice
1 Tbsp sugar
Directions
Preheat the oven to 350 degrees.
Rinse off apples before cutting. Slice in half, then slice thin slices with the flat part of the apple facing down, side to side. Make sure to remove any seeds or tough inside parts.
Place apple slices on a paper towel to remove as much moisture as possible. Then place in a large bowl with lemon juice, apple pie spice and sugar.
Heat a large skillet over medium heat. Place apple slices along the skillet bottom, don’t overcrowd the skillet, you can do this part in batches.
Let the apple slices cook through, flipping over after about 3-4 minutes. The slices should be soft, with no crunch left, but you also don’t want to over cook them.
Remove apple slices to a clean bowl and continue until all the slices or cooked.
Start from the outside of the ramekin, lining the apple slices. For the center, wrap one slice tightly before placing, it should hold its shape.
Bake for 30 minutes.
