Pear and Prosciutto Grilled Blue Cheese Sandwich
I’ve been watch Beat Bobby Flay and Top Chef a lot lately…like falling asleep to the sounds of ingredients being chopped and judgement. Well, this led me to my latest craving for blue cheese. I used to make a salad with blue cheese and pears, but it was a cold, snowy night and I wanted something warm. A few nights earlier on Beat Bobby Flay, a contestant made a blue cheese and pear sandwich and my idea was almost fully formed. It’s only a couple of ingredients and can easily be altered based on tastes.
Ingredients:
1 small French baguette
1 Tbsp olive oil
1 small Anjou pear, sliced thin
handful of arugula
1/2 cup crumbled blue cheese
3-4 slices of prosciutto
Directions:
Slice the French baguette in half and toast (I use a toaster oven, but you could also use your oven’s broiler), you can use a bit of olive oil on the bread here to get it crispy.
In a small sautee pan, heat oil over medium heat. Place sliced pears into pan and cook for about 2 minutes on each side. The idea is to get the pears softened but not mushy. Once cooked set aside.
Once the bread is toasted to your desired level, spread crumbled blue cheese on one half (or both halves) and place back in the toaster oven to melt the cheese, about 2-3 minutes.
When the blue cheese is melted, you can assemble with the ingredients. Arrange the pears on one side of the bread with prosciutto over top and add the arugula on top for some greens.

Tip: You can skip cooking the pears and just use them raw, it still tastes good!
