Blueberry and Thyme Gin Cocktail
I am a huge fan of gin. I’m not really sure how it started, but one hot summer day I made a classic gin and tonic and that was it for me. Now, I always have a bottle of it in the house. The trick now, is to make a gin cocktail more exciting from time to time. Enter: blueberries.
Ingredients
1 cup blueberries
1/2 cup sugar
1/2 cup water
4 sprigs of fresh thyme
3/4 cup club soda
1 oz gin, I use Tanqueray
Directions
In a small saucepan, combine blueberries, sugar, water and thyme sprigs. Cook on a medium heat until blueberries start to burst and the mixture becomes thick, about 8-10 minutes.
With a mesh strainer over a bowl, strain the mixture to remove thyme and blueberry skins.
Let the mixture cool to room temperature before refrigerating. You can make this the night, or day, before using in your cocktails.
To make the cocktails, fill a glass with ice. Add in the gin first, then the blueberry syrup and top up with club soda. You can add some extra garnish, a twist of lemon goes a long way. I have also added a dash of Agave for sweetness.
