Feelin' Fancy Lobster Dinner

I love lobster! I have found it surprisingly easy to make and affordable, well sometimes. I usually just buy one at a time, I like to get a lobster tail when it is fresh, but you can also buy the frozen packs and only defrost them as you need them. This was my first attempt at baking lobster tails, I usually grill them, but it’s December in New Jersey…

Ingredients

  • 1 lobster tail

  • 4 Tbsp of unsalted butter

  • 1 tsp salt

  • 1 tsp black pepper

  • 1 Tbsp chopped parsley

  • 1 bunch kale, or however much you like to eat in a sitting, chopped

  • 1 Tbsp olive oil

  • 3 cloves of garlic, finely chopped

  • 1 serving of cooked pasta

Directions

  1. Preheat the oven to 350 degrees.

  2. Line a baking sheet with foil, set aside.

  3. Melt 2 Tbsp of butter in a microwave safe bowl and add in salt and pepper, set aside.

  4. With kitchen shears, or scissors, cut down the bottom of the lobster tail. Split the shell carefully, insert a spoon and scoop out lobster meat, be gentle.

  5. Place the lobster meat over the shell on baking sheet and brush, or pour, butter mixture on top.

  6. Place in oven for 15 minutes.

  7. While the lobster tail is cooking, heat a large skillet with olive oil and minced garlic. Saute chopped kale until wilted

  8. Melt the remaining butter to dip lobster in

  9. Place cooked pasta in a dish, lay kale over it and then lobster tail

  10. Go eat your fancy lobster tail dinner!
